研究领域
主要从事食品安全与营养方向的研究工作。具体研究领域包括:
■食品中危害因子(塑化剂、甲醛、微塑料等)的污染监测和风险评估。
■食品中危害因子肝毒性和神经毒性评价与分子机制研究。
■植物活性成分功效评价(改善肝损伤、焦虑抑郁、炎症性肠炎等疾病)。
承担的课程
工程制图、食品工程原理、食品工艺学实验、食品科学与工程专业导论、食品毒理学等。
主持参与的课题项目
■湖北省自然科学基金联合基金重点项目,白花菜多糖调节肠道菌群改善糖尿病足的功效及分子机制研究,主要参与人,动物实验负责人。
■湖北省自然科学基金联合基金,水分-蛋白质互作对热加工鸡胸肉嫩度的影响机制,主持。
■食用野生植物保育与利用湖北省重点实验室开放基金重点项目2项,藜蒿基于5-HT/Wnt/β-catenin通路改善壬基酚所致神经发育毒性的机制研究;结合网络药理学分析不同溶剂的白花菜提取物体内外抗氧化活性的研究,主持。
■黄石市科技创新团队,农产品/水产品质量安全监测技术研究与示范科技创新团队,参与。
■广东省自然科学基金,基NAD+/SIRT1/MAO-A通路探讨烟酰胺单核苷酸对壬基酚所致学习记忆损伤的干预效应,参与。
■国家自然科学基金,基于Nrf2信号通路探讨桑葚多酚类物质对壬基酚神经行为毒性的干预机制,参与。
